No, you can't edit/modify the Curriculum courses (at least in the LR version we have now). The only aspect you can customize in the Courses would be the Playback Settings (e.g., font options, subtitles, pointers, etc.) If you wish to create your own set of lessons, you can start by creating your own Categories, and optionally add your new Categories/words into your own Playlist.
