Hi krb

My favourite is a rice dish.  I grab a few different veg like carrots, sweetcorn, green beans (usually what ever is on hand) - mixed frozen veg will be fine in an emergency - I chop them up smallish and lightly fry in a tablespoon of oil or marg, it gives a nice flavour, then I add a cup of rice and continue stiring for a minute or so.  Then I mix a stock cube (or a packet of soup powder) with two cups of water and pour it over the rice mix.  Turn your heat to low and put the lid on.  Set your timer for 20 mins and go and shower.  It should all be ready to eat on your return, sometimes with the different grains of rice this could take a little longer so just see.  The rice should be a little wet not dry add a little more liquid if needed.  Serve with emergency rolls (we keep a supply in the freezer for this purpose).  It will be as healthy as you want it to be with the veg and is a whole lot better than take outs.  The above estimates will serve 4.

Another standby which is always a hit with my family is Custard.  I serve it with tinned fruit, baked apples, sliced bananas, even cookies or cake on occasion.  You can keep a box or two in the cupboard, or the custard powder which you cook with milk or what I like most is to make my own. 

Custard recipe
2 egg yolks
2 tablespoons sugar
2 tablespoons cornflour
1 tablespoon Vanilla essence
3 cups of milk

Mix the yolk, sugar, cornflour and vanilla altogether in a bowl.
Heat the milk in a pot.  When it is warm add the yolk mix. 
Stir continuously until it thickens.  Let it bubble for a few seconds.
Remove from the heat.  Let it cool slightly and either refridgerate or serve straight away.
Do not leave it out of the fridge for too long if not being eaten straight away put it in the fridge.

Here is a dish I make that my grandson loves and it is pretty easy to do.

Homemade chicken pot pie

Large casserole dish
Bag of frozen peas
Bag of frozen corn
Equal amount of carrots cut up in small pieces
cook equal amount of chicken and cut into small pieces
2 cans of cream of chicken soup
Mix all these items together
Cover with pie crust
Bake at 350 for about an hour

Make it on the weekend makes great leftovers just warm up in microwave.

An easier to dish to make that my grandson loves.

If you are in hurry bag of frozen meatballs. Otherwise make your own meatballs(you can make your own meatballs on the weekend and freeze them).
You can either slow-cook these in cooker or put in microwave
Cover them in whatever spaghetti sauce you like or if you are doing the slow cooker you can use chili sauce and grape jelly mixture.

Slow cooker meals work great if you are working and trying to feed a little one. Throw it in the cooker before you go to work so when you come home it is ready to eat.
Most things you put in slow cooker only take a few minutes.

Chicken chili

3 cans of white beans
4 cups Chicken broth
frying pan full of chicken breast - cook in olive oil and shred

Throw it in slow cooker with seasoning - I use a Cajun type spice and quite a bit but you can season it to your taste.

to thicken just smash half of one can of beans

Beef stew

2lb of beef stew meat or cut up sirloin
2 cans of tomato soup
3-4 potatoes washed and cut up leave skins on
cut up and equal amount of carrots
add about a can of water
throw in slow cooker and cook

You can add onions if you like

box of elbow noodles
whatever spaghetti sauce you like

Boil the noodles
brown the hamburger
throw in casserole dish cover with spaghetti sauce and bake at 350 for 20-30 minutes just need to warm it

You can add ricotta cheese if you like for something different

This is an old family favorite. Easy, cheap and fast to make and most people have everything on hand. I call it the poor man's dinner.
Tuna on Toast
In a small saucepan, melt 1 tbs butter or margarine.
Stir in 1 tbs flour and a dash of pepper. Cook, stirring over low heat until evenly combined, making a roux.
Stir in 3/4 c milk all at once. Cook and stir constantly over medium heat until the mixture boils over entire surface. Cook for 1 minute longer to completely cook the flour.
Turn heat to low then add 1 can of tuna (drained), 1 can of peas (drained), and dried dill to taste. Cook until heated.
Top toasted bread slices with the mixture. You can stack them 2 or 3 high if you wish.

I normally either use a low salt can of peas or low salt can of tuna. I'm not a big fan of salty foods, and since canned food has a lot of salt, I find it better to cut it down some. I use fat free milk and whole wheat bread to make it a healthy, balanced meal.This recipe makes enough for about 7 pieces of toast (more or less depending on how much sauce you put on each slice), so you may need to double the recipe. It's normally enough for me and Gabriel to eat dinner and then have leftovers for myself for lunch.

As far as a healthy snacks Colin likes Peanut butter and bananas, humus with crackers, fruit, yogurt.

Anybody have some other suggestions for healthy snacks?

Healthy snacks...

Well the other day we learnt the saying 'an apple a day keeps the doctor away' on one of the sites we looked at it suggested sliced apple on toast sprinkled with cinnamon sugar.  It was delicious!   Just the apple with the cinnamon was good, if you're not keen on the bread part.

My great grand mother used to mash bananas and pour a little milk and sugar on top.  When she visited us that was her little treat that she made up - she was over eighty.  We loved it as kids and often had it for a snack.

I also saw a guide to drying your own bananas.  You just peel and slice them in half and bake them for 3hrs on a low temperature.  I haven't tried it, but it looks good.

My childrens favorite snack is... CHEESE.  They love it!  Im very unadventurous in my cheese eating, but thanks to dad, they will try just about any type of cheese!

I always make sure I have mince in the freezer and pasta, rice, tinned tomatoes, tomato paste and kidney beans in the pantry. We usually have onions, garlic and other veges in the fridge too.  With these ingredients I can throw together a few different meals that I call desperation tea  LOL

Bolognaise Sauce

Chop up an onion and garlic and saute in a frying pan. 
Add mince and brown.
Add some mustard or chutney to taste.
Add 1-2 tins of tomatoes and tomato paste to taste.
Add whatever chopped or grated veges you want to use up eg zucchini, carrots, capsicum, tomatoes etc
Season to taste with salt, basil, or anything else you feel like

Serve over pasta.

If we have leftovers I use them up the next night by reheating on the stove and adding a can of washed and drained kidney beans and seasoning with cumin and/or chilli.  You can also add more tinned tomatoes and veges if you want but if you add more tomatoes you will also need to add some more tomato paste to thicken it.  We serve this with rice, on toast or rolled up in flat bread.
