What you're looking for is way to apply specific playback settings for all Word Flash, Multisensory, and Picture Flash lesson (where settings differ for the three lesson types), is this correct?
At the moment the Override function does apply the changes to all your lessons, but you can actually use the Multiple Edit function to apply changes only to the sessions you've selected.
You can try these steps:
> Go to the Advanced Play/Edit screen and choose "Courses"
> "Expand" your lesson folders then select each Word Flash lesson (press and hold CTRL while clicking on each lesson)
> Click on the "Edit Categories" button and apply the settings you want the Word Flash lessons to have
You can do the same steps for the Multisensory and Picture Flash lessons. You may refer to this article for details on how to use the Multiple Edit function -- scroll down to the "Changing playback settings permanently for multiple lessons"

If selecting all Word Flash / Multisensory / Picture Flash lessons in the entire semester is difficult to do, you can just do it by parts (e.g., work on Days 1-20 first, then the next 20, etc.)
Unfortunately there is no shortcut for this, but once LR v3 is available, I'm sure you'll be able to do this easily without having too many steps
